
The Whisky Highball
Pour the Aperol into a wineglass. Fill the glass with ice cubes, then pour in the sparkling wine and seltzer and quickly dip the barspoon into the glass to gently mix the wine with the cocktail. Garnish with the grapefruit wedge.
A Venetian bar staple going back to the early 1900s, when soda water was added to Aperol to lighten it for daytime drinking. It became a global phenomenon in the 2010s as Aperol's parent company pushed it hard into international markets.
