Ingredients

  • 2 ounces
  • 1½ ounces Jameson
  • ¾ ounce Demerara Gum Syrup
  • 3 ounces hot brewed coffee

Method

Using a bowl and whisk, whip the cream until soft peaks begin to form. Warm a coffee or toddy mug by filling it with boiling water, letting it sit a minute or two, then dumping out the water. Pour in the whiskey and syrup, then slowly add the coffee while stirring continuously. Carefully spoon all the whipped cream on top of the drink.

History

Created in the 1940s by chef Joe Sheridan at Foynes Port in Ireland to warm up transatlantic flying-boat passengers, then popularized in America after a San Francisco travel writer brought the recipe to the Buena Vista Café in the 1950s.
